Does Hermes need write access to all of Pipedrive?

No. It gets only the operations you allowlist on the tools handle, so exposing Add Call Log and Add a Follower to a Deal grants exactly those and nothing more. The connected credential still bounds what is possible underneath.

How does it find the right Notion page for a deal?

Query Notion Database lets it search for the matching account before it writes. Then it appends to the existing page with Append Children to Block or leaves a note with Create Page Comment, rather than making a duplicate.

Where are the credentials kept?

Notion and Pipedrive are each connected once and resolved server-side at run time. The agent acts through both without the tokens ever entering the model's context.
