Only the operations you put on its allowlist. If you expose Query Notion Database and Add Comment to Card but not Delete Notion Block, the agent can read and comment but never delete. You decide the surface per node.

Does it keep Notion and Trello in sync automatically?

It can. Wire the On Database Item trigger from Notion or On Card Change from Trello and Hermes runs the moment something changes on either side. Each run sees the event and can act in the other tool right away.

Where do my Notion and Trello tokens live?

They resolve server side when a run starts and are never passed to the model. Hermes calls the operations with your connected credentials, so the tokens stay out of the prompt and out of the agent's reach.
