Will Hermes send email on its own?

The Gmail operations here are Create Email Draft and Forward Email Message, so it prepares drafts rather than sending cold. A person opens the draft and sends it, which keeps a human on the outbound. Expose only the operations you want and the agent stays inside them.

Can it permanently delete my mail?

Permanently Delete Message and Permanently Delete Thread are available, but the agent only gets them if you allowlist them. Leave them off and Hermes can draft, label, and forward without the power to erase anything. You set the operation list per agent.

Is my Google account safe with the agent?

Gmail runs through the OAuth credential you connect, scoped to whatever you grant, and resolved server side. The token never rides the model, so the agent drafts and labels using your access without holding it.
