Can it create new items on my board?

Not with these operations. The exposed Monday actions update columns, archive boards, groups, and items, and manage team membership, so the agent maintains existing items rather than adding them. You pick which of those it gets by allowlisting.

How does it match a doc to the right item?

You tell the agent which board and identifiers to use, and it reads the source with Fetch Document Content, then calls Update Item Column Value or Update Multiple Column Values. It only touches the columns and items you point it at.

Are my Monday and Google credentials safe?

Both connect once and resolve server-side at run time. The tokens never reach the model, so the operations on your allowlist are the full extent of what the agent can do.
