Use the Salesforce Execute SOQL Query operation to fetch exactly the records and fields you need, then write them with Google Sheets Write Sheet Data or Append Rows. You can also run Execute Report and Get Results for report-based exports.

Use the Upsert Record by External Id operation. With an external ID column in your sheet, Salesforce updates a matching record if one exists and creates it otherwise, so re-running the workflow stays idempotent.
