Can I stop the agent from creating records in bulk?

Yes. You choose which operations to expose, so you can allow Create Single Record while leaving Create Bulk Data Job and Create Multiple Records out. The agent only ever sees the operations you allowlist.

Will Hermes change or delete my calendar?

Only if you let it. Expose read operations like List Calendar Events and Fetch Calendar Event and it can plan around your schedule without touching it. Add Create Calendar Event and Delete Calendar Event when you want it to manage events too.

Does my Salesforce login pass through the model?

No. You connect the Salesforce and Google Calendar credentials once, and they resolve server-side at run time. The token never rides along in the model's context.
