Can I keep the agent from cancelling real orders?

Yes. Leave Cancel Order and Close Order out of the allowlist and Hermes can still read the sheet and adjust inventory, but it has no way to cancel anything. It only gets the Shopify operations you expose.

How does the agent know which spreadsheet and ranges to use?

You connect the Google Sheets credential and tell Hermes the sheet and ranges in your instructions. It reads and writes only the ranges you name, using operations like Read Multiple Sheet Ranges and Append Rows to Sheet.

Is my Shopify token visible to the model?

No. Both credentials resolve server-side when a tool runs, so the Shopify and Google Sheets tokens never enter the model's context.
