How do I stop the agent from touching payment methods?

Leave Attach Payment Method and Attach Source to Customer out of the allowlist. Hermes only receives the Stripe operations you expose, so it can add invoice lines without being able to move payment details.

Does my Stripe key pass through the model?

No. You connect the Stripe and Google Sheets credentials once and they resolve server-side at run time. The secret key never rides in the model's context.
