To the model you connect, into your Slack channel, and onto the HubSpot contact record. That is a real consideration for clinical or legal calls, and the honest answer is that transcripts of sensitive meetings probably should not be posted into a broad channel at all. Use a restricted channel, and say in the notes style what must never be quoted.
